we proof our dough for 72 hours

We are really careful in respecting the amazing Italian food traditions, we only use Italian flour and we make our dough like we used to make it in Italy! (long proofing times = crispiness and lightness), we use only the best ingredients we can find. But at the same time we like to be more interesting, more funky and just be ourselves!

We started with a woodfired oven on a trailer in Byron Bay

We moved back to Melbourne and turned a shipping container into a woodfired pizzeria

Now finally we have a roof over our heads

and It's a pretty cool roof too,
If we do say so ourselves!
